Chicken Piccata and Capers

I didn’t really know what a caper was for a very long time. All I understood was these tiny dark green pea-size food items tasted really great, and that I couldn’t get an ample amount of them. In the event you don’t really know what a caper is, a caper is the bud of the flowering plant known as Capparis spinosa. It’s difficult to consider, but merely a single very small caper is jam-packed with a big list of nutrition. This transforms any recipe to a nutritious one whenever you incorporate capers. Capers are extremely versatile and work extremely well in a range of recipes.

Turkey Quesadilla

I don’t know about your house but we are turkeyed out around here.   Everyone says they want enough turkey for leftovers but when it comes to the eating of those leftovers after two days they are sick of turkey.  While some of the leftovers can be frozen it is always best to use as much as possible within a reasonable period of time.

I made this recipe last Saturday for the family and no one complained that it was turkey again.  As a matter of fact no one even noticed.  They enjoyed the quesadilla that much.

Brine Your Turkey…then grill

A wide variety of ingredients can go into a brined turkey. The purpose is to give the turkey a boost in flavor and moistness (not sure that is a word but it fits). Combining a brined turkey with the grill adds extra flavor.

I have put together three of my favorite brines to use either on a turkey or a chicken. I have tried them all over the years and love them all.

#1 Ale Brined Turkey

  • 12 ounces beer (recommended: Pale ale or IPA style)
  • 3 tablespoons stone-ground Dijon mustard
  • 1 tablespoon agave nectar

Roasted Turkey for Gas Grill

A couple of years ago the electricity went out the day before Thanksgiving and being the electric company did not get turned on until the Friday after Thanksgiving. You can imagine my initial panic about how I was going to cook a Turkey for a family of eight. Luckily I had already pre-made my pies, but I still had to contend with cooking the potatoes, veggies and rolls. The rolls were no problem I just purchased some pre-made ones at the bakery but the rest of the meal should have turned out to be a disaster.

Arugula

This is an herb, vegetable or salad green, depending on the recipe.  Try it torn up as a salad on it’s own with chopped apples & blue cheese, or just add to a lettuce salad for a zip. A wonderful salad is made with spicy arugula,  shredded radiccio, a few seeded and sliced cucumbers and a simple vinaigrette. Or as a lettuce-replacement on a sandwich.  It can also replace spinach in many cooked spinach recipes.  (How about that famous American appetizer: spinach dip?)

Until a few years ago I had never heard of Arugula much less tasted it.  My daughter introduced me to it and I became an instant fan.

Lemon Chicken with Olives and Ricotta

Tired of Turkey yet?  Still have a little left over?  I know I am and I do!   Truefully if I don’t see another turkey for a couple of months that will be all right with me.

So on that theme I had to come up with some recipes for the leftover turkey.  There are tons of them out there, but this one I have made before with chicken, so why not use the turkey instead?   The guys in my house (of which there are many) loved it.  I hope you will too!

Turkey-Mango Quesadillas

This is a great fast recipe.   For those budget minded individuals use the fruit that is in season in your area…example: peach salsa.  Also if your family doesn’t like Gouda cheese as mine does not, use a cheese they do like.   I did find however, that cheddar doesn’t work well with the recipe.

Ingredients

* 4  8-inch flour tortillas
* 1  Tbsp. vegetable oil
* 6  oz. Gouda or smoked gouda cheese, thinly sliced or shredded
* 8  oz. cooked or smoked turkey or chicken, chopped
* 1/2  cup bottled roasted red peppers, drained and sliced
* 1  cup mango salsa or mango-peach salsa
* 1/4  cup snipped fresh cilantro (optional)

Turkey Salad In Tomato Cups

As many of my readers know, I am a Paula Deen fan.  Last weekend I did a Turkey outside on the grill, and it was wonderful ( I will post that recipe later).  Needless to say I have leftover Turkey.  So I thought what can I do with this other than sandwiches.   Then I started going through the recipes I have from Paula and found this chicken salad recipe.   Why not use Turkey instead?  Another brainstorm (I don’t get them often so I take advantage when I do) instead of making it a sandwich, stuff them into tomato’s and walla….a great luncheon for my husband and me!
