Ratatouille with Summer Vegetable

Eggplant is popular in most regions of the Southern United States. Thomas Jefferson, was the first to experiment with several types of eggplant in his Virginia garden, and it was he who introduced eggplant to The United States. Of Asian origins, the first types ended up being extremely sour tasting, but through cultivation and crossbreeding the flavor has greatly improved.

Feta Cheese…Two different Recipes…Chicken and Shrimp

When I was growing up Feta cheese wasn’t a part of my diet. To be truthful I don’t believe my mother knew what Feta was or how to make use of it. It simply wasn’t widely recognized here in the United States. Over the years I have turn into a big supporter of the Feta! It’s really a fantastic mouth watering cheese and extremely distinctive.

Feta cheese is amongst the earliest cheeses on the planet, and it is considered an authentic product from Greece. To be more precise, since October 14, 2002, feta cheese has become officially recognized as being a Greek only, cheese.

Bob Evans Burgers

 

First off let me say that home made hamburgers are not my favorite.  I just do not like the way I cook them, unfortunately for me my husband would eat hamburgers every day of the week, including Sunday.

So with that in mind I like to come up with creative ways to cook the ground meat.   I have tried adding Blue Cheese to the middle, chopped onions, different sauces to the mix prior to cooking, you name I have tried it.

Pumpkin Cookies

Whether you are planning on shipping cookies overseas or across the country here are some simple guidelines to follow.

When shipping cookies a common worry is that cookies will become stale and broken during the shipping process, but that does not have to happen. Make sure your cookies arrive at their destination still fresh and delicious by following some simple guidelines.

Keep in mind that it could take more than two weeks for your package to arrive, so do not send cookies that are extremely delicate, frosted or filled with custard. Cookies such as chocolate chip, oatmeal raisin, peanut butter, shortbread and bar cookies travel well.

A Homemade Christmas

Christmas celebrations consists of good friends, family, and food…lots and lots of food.  Which is why we gain weight during the holidays. Who can resist all those holiday goodies?

This recipe comes to us from our free download on the right.   I plan on trying out quite a few of these recipes this holiday season…so be sure and look for the blimp hovering over Michigan after January 1.

Pumpkin Cheesecake

This is one of my favorite recipes for pumpkin from my favorite chef…Paula Deen.  My husband made it a couple of years ago for Thanksgiving and it was a huge success.  It is easy to make and can be made a day ahead of the holiday.  I hope you enjoy it as much as my family did.

* 1 3/4 cups graham cracker crumbs

Brine Your Turkey…then grill

A wide variety of ingredients can go into a brined turkey. The purpose is to give the turkey a boost in flavor and moistness (not sure that is a word but it fits). Combining a brined turkey with the grill adds extra flavor.

I have put together three of my favorite brines to use either on a turkey or a chicken. I have tried them all over the years and love them all.

#1 Ale Brined Turkey

  • 12 ounces beer (recommended: Pale ale or IPA style)
  • 3 tablespoons stone-ground Dijon mustard
  • 1 tablespoon agave nectar

Spinach Cheese Mushrooms

This is a wonderful and easy appetizer. The only thing that I changed in the recipe was adding a sprinkle of Kosher salt and freshly ground black pepper.

RECIPE INGREDIENTS
1/2 pound torn fresh spinach
2 tablespoons water
3/4 cup reduced-fat ricotta cheese
3 tablespoons butter or stick margarine, softened
1 egg
2/3 cup grated Parmesan cheese
1/2 cup water chestnuts, chopped
1/3 cup finely chopped pecans, divided
56 large fresh mushrooms (about 3 1/2 pounds)
Refrigerated butter-flavored spray

DIRECTIONS
In a saucepan, bring spinach and water to a boil. Reduce heat; cover and cook for 3 minutes. Drain; squeeze dry and finely chop.
