Apple Surprise

First of all I am sorry I don’t have a picture of this creation, but it was gone before I could get my camera out!

I had about 6 apples that were sitting and gradually becoming what I call “funky” You know what I mean, not quite rotten yet, still edible but no one wants to touch them for some unknown reason. So I needed a dessert last night as it was my 39th wedding anniversary and we never go out but I wanted something different.

So my son, who loves to cook, and I got our heads together and came up with this simple dessert. You could substitute any fruit, as a matter of fact pears would be really good with this.

Take your fruit and cut in half and take out all the seeds. Place in a baking dish. Then make a mixture of melted butter, brown sugar, and cinnamon and put on top of
each piece of fruit.

Bake on 350 degrees for about 1/2 hour or until fruit is cooked soft.

Let the fruit cool a little, not all the way, but so it is not burning hot. Then top with your favorite Ice Cream, whipped cream, nuts, and caramel ice cream topping. Serve warm.

It is a simple dessert, easy to make, and a wonderful use of leftover apples!

Mini Ice Cream Sandwiches

RE_10247

We had some left over ice cream from when Ed made it and no one would touch it for some reason.   I guess no one wanted to be the one to finish off the ice cream.   So what to do with it?

I found this recipe and remembered my Mom made something very similiar when I was a kid, only she used vanilla wafers or any other kind of cookie she had laying around.

So you and the kids enjoy and be sure an experiment with different cookie/ice cream combinations.

Make Ahead Tip: Wrap and freeze for up to 1 week.
RECIPE INGREDIENTS
4 small vanilla-snap cookies
2 tablespoons fruit sorbet or frozen yogurt

DIRECTIONS
Top 2 cookies with 1 tablespoon sorbet (or frozen yogurt). Top with 2 more cookies. Freeze sandwiches for at least 30 minutes to firm up.

Ice Cream….Summer of 2009

Last year I made a post on the joys of homemade Ice Cream.  My husband had received an ice cream maker as a gift and since that time the Ice Cream literally is flowing in my home.

I love Ice Cream and some of the concoctions he has come up with are delicious…others not so good.

Summertime is a perfect time to make ice cream with the kids (or without).   Knowing what goes into your Ice Cream is half the battle towards enjoying old favorites.   Here are one of the more popular ice cream recipes:

CHOCOLATE BANANA

3 eggs

1 cup sugar

2 oz bittersweet chocolate

2 cups table cream (18% milkfat)

1 1/2 cups milk

6 tablespoons cocoa powder

1 tablespoon vanilla extract

3 over-ripe bananas

Juice of 1 lemon

Beat eggs lightly

Beat sugar in to eggs

Melt chocolate in milk and cream

When chocolate partially melted, stir in cocoa powder.

Continue stirring chocolate/cream mixture until hot but not quite boiling

Stir hot chocolate/cream mixture in to eggs.

Stir in vanilla extract.

Cool.

When ready to make, mash bananas and lemon juice together

Make chocolate mixture in ice cream maker.

Just before ready, add banana mixture.

Note: Use good quality, *very* ripe bananas. Otherwise your ice cream will have a strange flavor.

Ice Cream, Ice Cream, We All Scream for Ice Cream

Everyone knows that one of life’s great pleasures is Ice Cream. If you didn’t know that before, you know it now. I consider myself an expert in the field of ice cream having consumed enough to fill a small lake in my lifetime.

My love affair with Ice Cream began when I was very young. Chocolate is by far my favorite. And there have been studies that show that women need chocolate. I am sure you have all heard the reports, so I won’t bore you with the details. Now there has been researched done that shows that ice cream actually makes your brains pleasure zones even happier. Can you imagine being a participant in that study? What a wonderful job! Any sane women will tell you that millions of dollars did not have to be put into research for this information. Just ask one of us, for heavens sake. We have known for years that if you combine Chocolate and Ice Cream, you will have one happy person.

As I have stated in previous articles, my husband is a dessert genius. Christmas, 2007, our daughter bought him an ice cream maker. Since then he has become a master at creating all ice cream flavors for me. My favorite of course is his Triple Chocolate, although his Butter Pecan isn’t bad, or his French Vanilla, Strawberry is pretty good. But the Triple Chocolate is the favorite flavor of the week.

This recipe was made for the Kitchenaide Ice Cream Maker-follow the directions on your ice cream maker for freezing and mixing

Triple Chocolate Ice Cream
2 cups whipping cream, divided
2 squares (1-oz) semisweet baking chocolate, cut into chunks
2 squares (1-oz) unsweetened baking chocolate, cut into chunks
2 cups half and half
1 cup sugar
1/3 cup unsweetened cocoa powder
8 egg yolks
4 teaspoons vanilla
1/8 teaspoon salt
4 bars (1.55 oz) milk chocolate (about 1-1/2 cups)

Put your ice cream maker in the freezer per manufacturers directions. In small saucepan, place ½ cup whipping cream, semisweet chocolate, and unsweetened chocolate. Heat over medium heat until chocolate melts, stirring frequently. Remove from heat, set aside. In medium sauce pan over medium heat, heat half-and-half until very hot, but not boiling, stirring often. Remove from heat and set aside. Store in refrigerator at least 8 hours before putting ingredients into your ice cream maker.
