Standing Rib Roast

One of my all time favorite meals is Standing Rib Roast with Horseradish Cream.  For some reason I only make it once or twice a year, and never around holiday time because everyone in the family either wants Turkey or Ham.

Ambrosia Salad for the Holidays

My family laughs every time I mention Ambrosia Salad.  It seems every holiday party they go to it is there and for some absurd reason they think it is funny.  Go figure!

There is a reason why it is at every party you go to…it is good!  How often have you seen leftovers of Ambrosia Salad?  I bet not too often.  It is one of those food items that could be a side salad, then again it could be a dessert.  Take your pick!  Anyway I like it anytime of the year.

Cranberry-Apple Coffee Cake

Halloween is around the corner and with it comes the start of the holiday season. Time for family, friends, shopping and lots of good food.

Thanksgiving is the first big holiday after Halloween. I like to take them one at a time, if I think about them all at once then I become overwhelmed and stressed. Being stressed during the holidays isn’t fun as we all know. My husband gets stressed about it. Already he is asking what we are having for Thanksgiving dinner.

Cookie Time!

Two Sundays before Christmas has become somewhat of a tradition in our family for two of our children to come to our house and bake cookies.   Jenn and Pat have done this together for the past 15 years or so.

My husband and I are not allowed to comment, make suggestions, or watch.

This year the results of their afternoon are Swedish Nut Cups, Russian Tea Cakes and of course Thumbprint Cookies.  I am told that our daughter, Jenn, has the perfect size thumb for the Thumbprint cookies.   It is a lot of fun, but the cookies are generally gone within a day or two.

Making Thanksgiving Memorable

Thanksgiving dinners are like family reunions, here’s some ideas to keep your family entertained and make this Thanksgiving holiday more memorable.

Remember When…

This Thanksgiving, give your family memory jars. You can purchase inexpensive jars and filled each one with  identical slips of paper listing a specific family memory: a special wedding anniversary, family pets past and present, family jokes, names of friends and family no longer with us, vacation memories and so on. Each jar should come with instructions to read one memory each day through New Year’s Day. Be careful though that you don’t read all the slips in one day!  As you read each family member will have another memory of the same event seen only through their eyes.  When all your past memories are read and laughed over, keep the jar out to add new memories to share with your family next year!

Our Christmas Ham

Over the years it has become a Christmas tradition the cooking of the ham.
Everyone who tastes the ham I cook has asked how I manage to have such a moist and tasty ham. The answer is quite simple and one which I share willingly with anyone, in hopes one of my adult children will pick up the Christmas tradition.

Nancy’s Ham

For my family of 8 I purchase a 18-10 pound whole ham, not a spiral, as these do have a tendency to dry out faster.

Fresh Cranberry Muffins

Muffins make great breakfasts or grab-and-go snacks, and these cranberry goodies capture the delicious flavors of the holiday season. To breeze through your holiday cooking, bake the muffins ahead of time and store in the freezer. Try substituting blueberries and lemon rind for a fresh twist on this recipe.

Feel free to use your imagination with this basic muffin recipe by substituting your other favorite fruits and flavors for the cranberries and orange rind. Some options we like: blueberries and lemon rind; chopped apple, pear, or pineapple and cinnamon; or mashed bananas and allspice.

Cranberry-Glazed Sweet Potatoes

No holiday table is complete without a cranberry-sweet potato combo, plus this duo is good for both your stomach and your health. Both cranberries and sweet potatoes are great sources of vitamins A and C and complement meaty main dishes well. Plus, they’re super easy to prepare. Six ingredients and 30 minutes are all you need to get these potatoes on the table–and all the cooking is done in the microwave.
