Mississippi Mud Brownie Recipe
Nothing says comfort food as much as Chocolate. And nothing says chocolate better than Brownies.
It is a scientific fact that women need chocolate to make them feel better. I don’t really care what all technical jargon is or why it makes us feel better, just happy that it does and I have a very good reason to eat it.
This brownie recipe was sent to me by a friend, not sure where she got it, and really don’t care. This is wonderful. I would suggest not sharing these with your kids though, these are for you only.
RECIPE INGREDIENTS
3 sticks butter (softened)
2 cups sugar
6 oz. melted chocolate
4 eggs (1 at a time)
1 1/2 cups flour
1 1/2 teaspoons baking powder
1 cup coconut
1 cup chopped pecans
1 jar marshmallow cream
5 Tablespoons cream
1 box powdered sugar
1 teaspoon vanilla extract
Non Stick Spray (such as Pam)
DIRECTIONS
Mix together 2 sticks butter, 2 cups sugar, 3 oz. melted chocolate, and 4 eggs adding the eggs one at a time and beating mixture after each addition.
Add the flour, baking powder, coconut and pecans and mix well.
Spray a 9″ x 13″ pan with non stick spray and pour the batter into the pan.
Bake at 300* for 45 minutes.
While the cake is still warm spread the top with the marshmallow cream, then let the cake cool completely.
To frost the cake, melt 1 stick butter, 3 oz. chocolate, and 5T. cream together in a pan.
Remove from heat and add powdered sugar and vanilla. Mix together until smooth and spread on top of cake.

Comfort Foods
I enjoy cooking, I enjoy eating good food. I have a particular fondness for what I call “comfort food”. Comfort food to me means food that tastes like some love was put into it. Not that having your family eat healthy food means you don’t love them. You do and you care what goes into their bodies. I cared what went into my children’s bodies. My body is another matter.

If you are looking for chocolate, fried foods, cakes, desserts, family meals: look here! There will be a variety of good old fashion cooking ideas and recipes for your eating pleasure
If there is one thing you will learn from this page it is how to enjoy comfort food without feeling guilty. If you do feel guilty, then maybe this page isn’t right for you. Fried chicken, chocolate cake, cookies, ice cream, all can be good for you if eaten in moderation. Moderation is the key to all good things! At least that is what I tell everyone!
I have always enjoyed food that was not good for me according to my doctors. I do not like to eat a lot of vegetables, although I do eat them. I prefer to eat red meat as opposed to meat that is low in fat content. I will eat a dessert before eating a nutritious meal, because I don’t know who made the rule that you can’t enjoy your dessert before the meal rather than after. I think just because you are on a diet you should not cut out all the foods you enjoy, and following that principle I have still managed to lose weight!
Remember moderation in all things is the key to healthy living. Don’t expect to eat all the chocolate chip cookies and lose weight or feel good for that matter. It will give you a temporary high, then once the sugar wears off you are down again. Although even a temporary high once in a while sound good!
