Frosting or Icing-You Choose

Recently a discussion was had by my husband and myself on is it called icing or frosting. Typically the term is often used to identify the same ingredients causing quite a bit of confusion among those of us who are trained chefs. This discussion led to research on what, if any, is the difference. Here are some of my conclusions.

Frosting

Frosting is a fluffy, thick concoction that will hold its shape. You can pipe decorations with it like you see on cakes.

Pumpkin Cheesecake

This is one of my favorite recipes for pumpkin from my favorite chef…Paula Deen.  My husband made it a couple of years ago for Thanksgiving and it was a huge success.  It is easy to make and can be made a day ahead of the holiday.  I hope you enjoy it as much as my family did.

Happy Holidays!

Ingredients
Crust:

* 1 3/4 cups graham cracker crumbs
* 3 tablespoons light brown sugar
* 1/2 teaspoon ground cinnamon
* 1 stick melted salted butter

Remembering the Holiday Baking

When I saw this recipe at Cooking.com, I was taken back to the wonderful smells coming out of the kitchen during the holidays as a child.  Baked bread, cookies, pies, cakes and then the smell of Turkey and all the trimmings.  I get hungry just thinking about those smells.

My mother made a cake very similar to this only she used Pumpkin Pie spice in place of the spices listed.  She usually made it a couple of days before the holiday and kept in the refrigerator.  She took it out the night before to make sure it was a room temperature the next morning.

Cinnamon Rolls

I found this recipe online just before Christmas. Because Christmas morning is always so hectic I usually just serve some type of sweet roll, juice, and coffee. This year I decided I would bake a recipe from scratch.

These are absolutely wonderful cinnamon rolls; very rich and tasty! The best part for me was that I could mix the ingredients, roll, fill, shape, then freeze them a couple days ahead of time. I made about 8 dozen of them, and took out only what I needed the night before so they can thaw out and rise. The next morning when everyone was done opening their presents I just popped them in the oven for fresh, warm cinnamon buns!
