Simple Caramel Apples

It is that time of year again when the apples are so good and juicy. Here in Michigan they are in coming into their peak time and available everywhere.

For the last several years I have gone and purchased delicious Caramel Apples from our local candy maker. They are soooo big and delicious you have to cut them into quarters in order to eat them. They are covered with caramel, chocolate and lots of other goodies. They are so good, and so fattening. I get a sugar rush just thinking about them. They also cost around $7.50 each!

Cousin Johnnie’s Caramel Apple Cheesecake

Those of you who have followed the blog for a while know I am a huge fan of Paula Deen. She is my cooking hero. Anyone who can cook with butter and not feel any shame has my vote for cook of the century.

This cheesecake recipe I tried last year when apples were in season and it was wonderful. Going to make it again in a couple of days so dug the recipe out and sharing it with you. Even if you are not a seasoned cook, this recipe is easy.

Apple Surprise

First of all I am sorry I don’t have a picture of this creation, but it was gone before I could get my camera out!

I had about 6 apples that were sitting and gradually becoming what I call “funky” You know what I mean, not quite rotten yet, still edible but no one wants to touch them for some unknown reason. So I needed a dessert last night as it was my 39th wedding anniversary and we never go out but I wanted something different.

Double Cranberry-Apple Sauce

From Family Fun.com

Apples add fresh seasonal flavor to the traditional cranberry sauce. Reviewer Kir says, “This is an excellent recipe. Even my husband who does not like cranberries raved about the dish.” A little stovetop cooking is all that’s required. Add this sauce to your “make-ahead” list–it keeps fresh in the refrigerator for up to two weeks.

Yield

Makes about 5 cups
Ingredients

* 6  large Granny Smith apples, peeled and diced
* 1  (12-ounce) package fresh cranberries
* 1  small lemon, sliced and seeded
* 1  cup  granulated sugar
* 1/2  cup  water
* 3/4  cup  sweetened dried cranberries

The Perfect Pie Crust

My husband is baking again! I am on a diet, sort of. So I am staying out of the kitchen and just smelling, and I have gained at least two pounds.

So anyway, a few minutes ago he was yelling that he didn’t have his pie crusts for his apple pie so he couldn’t make it, the apple pie that is. I said “why not make them yourself”, and you would think I grew two heads! “I don’t know how”, he says. As wonderful a baker as he is, he has never made pie crusts from scratch.

Apple Sauce Cake

2 cupfuls flour
1/8 teaspoonful cloves
1 1/2 teaspoonfuls cinnamon
1 teaspoonful nutmeg
1 teaspoonful baking soda
1/4 teaspoonful salt
1 cupful sugar
1 cupful apple sauce (unsweetened)
1/3 cupful fat
1 cupful raisins, cut in halves

Mix the sugar and apple sauce; add the fat. Mix the dry ingredients. Through a sifter, add them to the apple sauce mixture. Flour the raisins and stir them into the batter. Turn into a greased loaf-cake pan or into two layer-cake pans. Bake in a moderate oven (375 degrees F.). If the cake is baked in layers, put Raisin Filling between them, but omit the raisins in the cake batter.
