Pistachio, The Little Nut That Can!

I love pistachio nuts. Simple straight forward statement to go with a not so simple nut. Having cholesterol problems I always thought pistachio’s were not good for me. Not so I have recently learned. This makes me very happy!

Pistachios are very healthy, they are a wonderful source of energy. Not to say they don’t have calories, they do, 100 g of nuts will contain about 557 calories. But 100 g is a lot of nuts to eat! I think I can do it! However these little nuts contain many nutrients, minerals, antioxidants, and vitamins that are essential for a good healthy body!

Remembering the Holiday Baking

When I saw this recipe at Cooking.com, I was taken back to the wonderful smells coming out of the kitchen during the holidays as a child.  Baked bread, cookies, pies, cakes and then the smell of Turkey and all the trimmings.  I get hungry just thinking about those smells.

My mother made a cake very similar to this only she used Pumpkin Pie spice in place of the spices listed.  She usually made it a couple of days before the holiday and kept in the refrigerator.  She took it out the night before to make sure it was a room temperature the next morning.

Chicken with Parsley Dumplings

Conversation, laughter, teasing and good food are some of what I remember about Sunday dinners when I was a child.  I also remember the meals.  I have always loved food even as a child.  As with any child I didn’t always love what was good for me but the sit down dinners began my love affair with a wide variety of foods and tastes.

My Mom was not a gourmet cook.  A lot of times the food was not what I would call out of the ordinary.  But it was always plentiful and favorable.  Lots to go around and filling. She wasn’t afraid to try new items, flavors or recipes she found in books.  Lots and lots of cookbooks!

Ice Box Rolls

With the holidays soon upon us I was thinking about holiday dinners of the past. When I was a child there was one recipe that my mother made all the time and it was always so good.

You can go and buy your rolls for the holiday feast at your house, but here is a recipe that is one of the best roll recipes I have ever had. Thanks Mom!

Mix together: 1 ½ cup lukewarm water
2/3 cup sugar
½ teaspoon salt

Crumble into mixture: 1 cake compressed yeast
Stir until dissolved

Add: 2 eggs
2/3 cup soft shortening

The Perfect Pie Crust

My husband is baking again! I am on a diet, sort of. So I am staying out of the kitchen and just smelling, and I have gained at least two pounds.

So anyway, a few minutes ago he was yelling that he didn’t have his pie crusts for his apple pie so he couldn’t make it, the apple pie that is. I said “why not make them yourself”, and you would think I grew two heads! “I don’t know how”, he says. As wonderful a baker as he is, he has never made pie crusts from scratch.
