Family Meals

Sitting down to a family meal should be one of the highlights of the day for everyone involved. In todays busy world too many families are eating fast food or eating on the go. Not enough children are eating healthy foods. Where obesity was once a problem only for adults it has become increasingly noticeable in children of all ages.

It is up to us as parents to teach our children from a young age healthy eating habits. There is nothing wrong with an occasional trip to Taco Bell (which I am very guilty of), but fast food should not be used every day for your main meal. Sure the fast food industry has tried to make meals healthier, but there is nothing to compare to sitting down once a day to a home cooked meal.

Simple Caramel Apples

It is that time of year again when the apples are so good and juicy. Here in Michigan they are in coming into their peak time and available everywhere.

For the last several years I have gone and purchased delicious Caramel Apples from our local candy maker. They are soooo big and delicious you have to cut them into quarters in order to eat them. They are covered with caramel, chocolate and lots of other goodies. They are so good, and so fattening. I get a sugar rush just thinking about them. They also cost around $7.50 each!

Devil’s Food Spider Cupcakes

RECIPE INGREDIENTS
24 unbleached muffin cups
1 2/3 cup Henry’s Organic Whole Milk, scalded
1 cup unsweetened cocoa powder
2 cup sugar
3 1/2 cup organic, unbleached, all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon salt
2 sticks  Unsalted Butter
2 cups sugar
6 Henry’s Large Eggs
1 tablespoon vanilla extract
12 Henry’s Chocolate Sandwich Cookies, separated
48 naturally sweetened yellow jellybeans
48 black pipe cleaners, cut in thirds or quarters

DIRECTIONS
Preheat oven to 350 degrees F. Line two 12 cup muffin pan with muffin cups.

Mix cocoa, 1/2 cup sugar into milk. Set aside to cool.

Banana Chocolate Chip Muffins

I don’t know about you, but I remember four very active children all trying to get ready for school in one bathroom.   Although I now look back on these times as “fun”, back then I just tried to keep the peace, make sure teeth were brushed, hair combed, and clothes that matched before they left the door.   I also tried to get them to eat a good breakfast, but soon learned that cereal of any type never got ate.  The store bought “breakfast bars” were not only expensive for me as one of my boys would eat the whole box in one day, but not as nutritious as I felt was necessary.

Spicing Up Grilled Cheese Sandwiches

Grilled cheese sandwiches are the least cumbersome meal to prepare. Kids can even learn to prepare it themselves. The ones I used to make contained regular cheese and white bread with margarine to cook it. Here are a few ways to make that grilled cheese sandwich healthier for your little ones.

First of all you need to slim the cheese. Full fat cheeses are a thing of the past. A slice of fat free cheese melts just the same with fewer calories and fat. If American cheese is too boring, try a slice of Swiss or cheddar cheese. Monterey Jack is good on a sandwich, also. One slice of cheese is plenty, but if you are using the fat free kind, you could probably get by with two slices for a creamier sandwich.

Kids Eating Habits

I have always been a firm believer that forcing children to eat certain foods and to clean their plates causes more harm than good. My husband and I raised four healthy happy children who if they tried something on their plate and they didn’t like it, then they didn’t have to eat it. As long as they took a bite and tried it, it wasn’t forced on them. They were served small portions and if they wanted more, they got more. There wasn’t a picky eater among them, so I guess my theory did work.
