ONLY 332 DAYS TILL CHRISTMAS

I know none of us really want to think about Christmas right now. But last year being short on money and long on time, I decided that I was going to take a step back in time and make most of my Christmas gifts

By the time the holiday actually got here I was more than ready. No real rush at the end of the year to make sure that I had every one covered. So hang in there with me and we will make this journey together.

Standing Rib Roast

One of my all time favorite meals is Standing Rib Roast with Horseradish Cream.  For some reason I only make it once or twice a year, and never around holiday time because everyone in the family either wants Turkey or Ham.

Christmas Cookie Exchange

When the children were young and I was overwhelmed with cleaning, cooking, shopping, wrapping, decorating, parties;  the one party I loved attending was the Cookie Exchanges.  Usually these were organized by someone at one of the kids schools.  Not only did it give me an evening away from kids, husband and chaos, but the cookies were so good!

We would each bring a variety of cookies to the exchange.  For instance each person who attends makes a large batch of cookies (2 recipes each), then divide those batches into a dozen cookies each, then everyone who attends will go home with enough cookies for the holidays!  To make it even better, we each brought the recipes with us and copied them so each of us had the recipes from the other people.

Pumpkin-Walnut Cake

I love the fall time, the colors turning on the leaves, the crispness in the air and just the overall feel of the season.

Thanksgiving and the Christmas holidays are right around the corner so it is time to start planning our Christmas treats. Pumpkins, cranberries, turkey, stuffing, sweet potatoes, and for our family all the Polish and Irish goodies that come with our traditional holiday celebrations.

Do you remember as a child waking up on a holiday morning to the smell of pumpkin pie baking? The cinnamon smell throughout the house signaled a special day. Close your eyes and the smell will come back!

Christmas In Ireland

This past year I have been researching my Irish ancestry. I mean it is one thing for an American to say they are Irish, but another to be Irish.

During my search I started wondering about Irish traditions outside of dancing, pub night, drinking, and having a good time, which the Irish seem to be able to do with great enthusiasm.

Now that the Christmas season is upon us I started to wonder what are the traditional Irish Christmas foods?

Beer Barbeque Sauce

Labor Day, the end of the summer cookouts, so they say.   I like to cook out all year even in the winter months.  I just move my grill in the gargage, keep the gargage door open a couple of inches to take out any smoke and I barbeque.  Everything taste better if you barbeque.

I like to use this sauce on ribs, hamburgers, and even steak if I am in the mood.  Of course I always save some of the beer for drinking while cooking.  Barbeque all year round keeps those of us in the northern climates from going crazy with the cold weather…you should try it this year.  Don’t just do it in the Summer..all year round.

Melon Quenchers

Tomorrow is July 4th..Independence Day.  A day for families, celebration, picnics, fireworks, and getting sunburned!

By now you have your picnic planned, your spot picked out at the park, or your backyard barbeque cleaned and ready.  After all that hard work you need a cool drink!  I found this variation of one I have been using for years at Better Homes and Garden magazine while waiting in the Doctors office.  The only item I never added was the yogurt, but I am willing to try it.  The pureed fruit blended with ice and sparkling water will make a refreshing summer drink. A spoonful of yogurt will add creaminess, while a skewer of fresh fruit makes a pretty garnish.

Memorial Day-Side Dish

Memorial Day weekend is the start of summer time period and there’s no greater time for you to be the queen (or king) of fire and charcoal.

Regardless of whether you refer to them as cookouts, potluck’s or barbecues, the summer season is loaded with several events which are suitable for an outdoors meal. And also this suggests that there’s a pretty good possibility you’ll be asked to go to a number of such events within the subsequent couple of months.

Thumbprint Cookies

A staple in any holiday cookie, the thumbprint cookie is easy and fun to make with your family.

Ingredients

* 1 cup of butter (2 sticks or 8 ounces), room temperature
* 1/2 cup of sugar
* 2 eggs, room temperature
* 1 teaspoon of vanilla extract
* Pinch of salt
* 2 cups of flour
* 1 cup of chopped nuts (optional)
* 3/4 cup of your favorite jam

* Parchment paper

Method

1 Cream the butter and sugar on high speed for about 3 minutes.

Pumpkin Cookies

Whether you are planning on shipping cookies overseas or across the country here are some simple guidelines to follow.
