Pumpkin-Walnut Cake

I love the fall time, the colors turning on the leaves, the crispness in the air and just the overall feel of the season.

Thanksgiving and the Christmas holidays are right around the corner so it is time to start planning our Christmas treats. Pumpkins, cranberries, turkey, stuffing, sweet potatoes, and for our family all the Polish and Irish goodies that come with our traditional holiday celebrations.

Do you remember as a child waking up on a holiday morning to the smell of pumpkin pie baking? The cinnamon smell throughout the house signaled a special day. Close your eyes and the smell will come back!

The Ultimate Mac And Cheese

This mac-and-cheese makeover has all the comfort and great taste of its predecessors with a substantially more healthful profile. It uses whole-wheat pasta and includes a colorful layer of spinach. It’s also a winner for make-ahead convenience.

RECIPE INGREDIENTS

  • 3 tablespoons plain dry breadcrumbs
  • 1 teaspoon extra-virgin olive oil
  • 1/4 teaspoon paprika
  • 1 16-ounce or 10-ounce package frozen spinach
  • 1 3/4 cups 1% milk, divided
  • 3 tablespoons all-purpose flour
  • 2 cups grated extra-sharp cheddar cheese (6 ounces)
  • 1 cup low-fat (1%) cottage cheese
  • 1/8 teaspoon ground nutmeg

Chicken, Charred Tomatoes & Broccoli Salad

I have a lot of recipe books that were given to me over the years and I receive a lot of magazines.  One of my favorite is Eating Well Magazine.  I have yet to find a recipe that I didn’t like.

This is a very simple recipe and one that I would advise making well before serving.  It can sit in your refrigerator for up to two days, but no longer.   It is great for those leftover chicken pieces, although the recipe calls for only white meat, I tried it with dark and light and it tasted great.  I had some tomatoes that were just at the point of maybe not using, too ripe for salads.  I used those and again tasted really great.

The Essential EatingWell Cookbook

This is the newest addition to my cookbook collection. My husband says he might have to put another room on the house to hold all of them! Throughout this site I have referenced several recipes from Eating Well magazine. I love their approach to healthier eating. This cookbook which I will admit I have just purchased is sure to be a winner. I can’t wait to try out some of their recipes, as I have never been disappointed in any of their magazine recipes.
