Cousin Johnnie’s Caramel Apple Cheesecake

Those of you who have followed the blog for a while know I am a huge fan of Paula Deen. She is my cooking hero. Anyone who can cook with butter and not feel any shame has my vote for cook of the century.

This cheesecake recipe I tried last year when apples were in season and it was wonderful. Going to make it again in a couple of days so dug the recipe out and sharing it with you. Even if you are not a seasoned cook, this recipe is easy.

Perfect Pumpkin Pie

Ingredients

* 1 recipe Pastry for Single-Crust Pie (see below)
* 1 15-ounce can pumpkin
* 2/3 cup sugar
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground ginger
* 1/2 teaspoon ground nutmeg
* 3 slightly beaten eggs
* 1 5-ounce can (2/3 cup) evaporated milk
* 1/2 cup milk

Directions

1. Prepare and roll out Pastry for Single-Crust Pie. Line a 9-inch pie plate with the pastry. Trim to 1/2 inch beyond edge of pie plate. Fold under extra pastry; crimp edge as desired.
