Tired of Turkey yet? Still have a little left over? I know I am and I do! Truefully if I don’t see another turkey for a couple of months that will be all right with me.
So on that theme I had to come up with some recipes for the leftover turkey. There are tons of them out there, but this one I have made before with chicken, so why not use the turkey instead? The guys in my house (of which there are many) loved it. I hope you will too!

I am sure some of you know this method of cooking chicken, but for those of you who don’t…well I will just say you are missing a wonderful way to cook chicken. Whether you like chicken breasts, thighs, or legs this recipe is good with all. I like to de-bone my pieces first, it makes it easier to eat when it is done.
I don’t remember where I got this recipe or when…but I do know that it is a hit for football weekends…tailgate parties, or anytime the family gets together with friends. So enjoy!
INGREDIENTS:
8 oz. pkg. cream cheese, softened
1/2 cup blue cheese or ranch salad dressing
1/2 cup any flavor red hot Sauce
1/2 cup crumbled blue cheese or shredded mozzarella cheese
2 cans (9.75 oz. each) White Premium Chunk Chicken Breast in Water, drained
DIRECTIONS:
1.HEAT oven to 350°F. Place cream cheese into deep baking dish. Stir until smooth.
2.MIX in salad dressing, red hot sauce and cheese. Stir in chicken.
3.BAKE 20 min. or until mixture is heated through; stir. Garnish as desired. Serve with crackers or vegetables.
As many of my readers know, I am a Paula Deen fan. Last weekend I did a Turkey outside on the grill, and it was wonderful ( I will post that recipe later). Needless to say I have leftover Turkey. So I thought what can I do with this other than sandwiches. Then I started going through the recipes I have from Paula and found this chicken salad recipe. Why not use Turkey instead? Another brainstorm (I don’t get them often so I take advantage when I do) instead of making it a sandwich, stuff them into tomato’s and walla….a great luncheon for my husband and me!

While his was very tasty and moist, this recipe will put his to shame (yours is still good, Tony!).
1 (3 1/2 to 4 pounds) whole chicken*
1 (12-ounce) can beer (cut off top with a can opener)
1 cup butter or olive oil
2 tablespoons garlic salt or 4 to 5 cloves garlic, crushed
2 tablespoons paprika
Pinch cayenne pepper or to taste
Fresh or dried herbs of your choice
Coarse salt and freshly ground black pepper to taste
Summer is only a few weeks away from being official. For most families it is a busy time of the year. So get out the grill and with a little time spent on prep you can have a dinner the kids will love and grownups will have a meal that is filling and not fattening.
Grilled Orange Chicken Fingers
Serve with carrot sticks and dip and kids will love this meal: they can eat everything with their fingers. The simple, sweet glaze for the chicken can be whipped up fast; marinating time is just 15 minutes and the marinade caramelizes deliciously on the grill.
All the vibrant flavors of a Caesar dressing go wonderfully with pasta, making this the ideal way to enjoy the classic salad without the wilted lettuce that would result from making it ahead. Replacing the dressing’s traditional egg enrichment with creamy low-fat yogurt results in a dish that will keep far better for outdoor enjoyment. Quickly grilled chicken transforms it into a main dish. You could either make the chicken ahead, as described below, tossing it with the rest of the salad; or make the salad without that addition, grilling the chicken in your backyard or at the picnic site, slicing it, and draping the slices over each serving. Steak makes an excellent alternative to the chicken. If you like, serve the salad on a bed of Romaine lettuce leaves – a nod towards the original Caesar.
