What is Diabetes and how do you go about Controlling Diabetes?

When you have diabetes there is too much sugar in your blood. After you eat, your food is broken down into a sugar called glucose, which is carried by your blood to cells throughout your body. Insulin, a hormone, helps the glucose move from the bloodstream into cells, where it is burned as energy to keep your body functioning. People with diabetes either don’t make enough insulin or their cells don’t recognize insulin. The result in both cases is that glucose in the bloodstream can’t get into cells to be used for energy, and instead builds up in the blood.

Standing Rib Roast

One of my all time favorite meals is Standing Rib Roast with Horseradish Cream.  For some reason I only make it once or twice a year, and never around holiday time because everyone in the family either wants Turkey or Ham.

Cheesecake-A Tradition

What was the world like before cheesecake? I can’t imagine!

I went on an Internet search for the origins of cheesecake (yes, I have way to much time on my hands). It seems it has been around for a very long time. As far back as 776 BC (no! Not Before Children) the ancient Greeks are thought to have served cheesecake to the first Olympians before the games. Of course the Romans could not be outdone and spread the taste throughout the Roman Empire. A couple of thousand or so years later the European immigrants brought the delicious concoction to America. And all this before the Cheesecake Factory was even thought of!

Frosting or Icing-You Choose

Recently a discussion was had by my husband and myself on is it called icing or frosting. Typically the term is often used to identify the same ingredients causing quite a bit of confusion among those of us who are trained chefs. This discussion led to research on what, if any, is the difference. Here are some of my conclusions.

Frosting

Frosting is a fluffy, thick concoction that will hold its shape. You can pipe decorations with it like you see on cakes.

Fondue Mystery Solved

One of the most significant unsolved secrets from the kitchen area may be the fondue cooking pot.Fondue cooking pots undoubtedly are a common wedding registry pieces and they’re frequently given as house warming presents. However by the time the thank you cards have already been delivered, the fondue cooking pot has typically vanished not to be seen  again. They end up at the back of a cabinet or even in the attic room or some are even re-gifted. How come everybody desire a fondue cooking pot but nobody actually will get close to to creating fondue?

Ratatouille with Summer Vegetable

Eggplant is popular in most regions of the Southern United States. Thomas Jefferson, was the first to experiment with several types of eggplant in his Virginia garden, and it was he who introduced eggplant to The United States. Of Asian origins, the first types ended up being extremely sour tasting, but through cultivation and crossbreeding the flavor has greatly improved.

Chicken Tortilla Soup Made Easy

Since I have  inherited the family “curse”  high cholesterol levels, I try watching whatever I eat, the amount I take in, and get all the physical exercise when I can squeeze into each day.  High cholesterol levels doesn’t imply you need to quit your favorite food items, it signifies be sensible with what you eat, be familiar with what is incorporated in the products you’re eating.  You can still enjoy food!

Chocolate Zucchini Cake

Zucchini, Zucchini…I think I planted too much of it…again!  Last year we ate Zucchini bread until we were sick of it, but I still planted more.

So this year in addition to the “normal” recipes of frying, grilling, baking (especially good if you use it like you would Eggplant Parmesan, but that is another recipe),  or just slicing and putting it into a salad, I decided I would try something new.  Since my love of food includes all things chocolate I decided to try this recipe.  I have only one thing to say..it is a hit!

Chicken, Charred Tomatoes & Broccoli Salad

I have a lot of recipe books that were given to me over the years and I receive a lot of magazines.  One of my favorite is Eating Well Magazine.  I have yet to find a recipe that I didn’t like.

This is a very simple recipe and one that I would advise making well before serving.  It can sit in your refrigerator for up to two days, but no longer.   It is great for those leftover chicken pieces, although the recipe calls for only white meat, I tried it with dark and light and it tasted great.  I had some tomatoes that were just at the point of maybe not using, too ripe for salads.  I used those and again tasted really great.
